Local pride at the highest level
Casper Zwemer

What began with a short study period as a Maritime Officer and in Commercial Economics evolved into a clear calling in gastronomy: cooking as a way to connect identity, region, and people.
Zeeuwse Streken
Local pride at the highest level: that is what nominee and former HZ student Casper Zwemer stands for with his restaurant Zeeuwse Streken in Middelburg. In everything he does, the strength of Zeeland is central. Zeeuwse Streken is much more than a place to eat: it is an ode to the region, its products, and its people.
Zeeuwse Streken brings local ingredients and craftsmanship to the level of a top restaurant, without losing accessibility. The fish comes from local waters, vegetables from regional farmers, and even family plays a role in the story behind the dishes. Everything revolves around connection with the region and the people who contribute to it.
Rooted in Zeeland
Cas grew up in Arnemuiden, surrounded by boats, surf, and long summers by the sea. That connection to Zeeland still resonates in every detail of the restaurant. The name Zeeuwse Streken refers not only to the landscape of sea, beach, and polders, but also to the character of the people of Zeeland: honest, independent, and bold.
From that strong foundation, Cas continuously seeks new connections. He experiments with innovative products such as seaweed and builds links with social and even political themes. In doing so, he uses his restaurant as a platform to spark broader conversations, connecting gastronomy with culture, sustainability, and regional pride.
The impact of this is clearly noticeable. Guests come not only for a dinner, but for an experience in which flavor and story come together. Local makers are given a stage, and a network emerges in which collaboration is central. Every table has its own story, every dish its own tone.
More than gastronomy
What began as a passion for cooking, inspired by chefs such as Erik van Bockhoven and Michel Louws, grew into a life’s work in which craftsmanship and entrepreneurship come together. In the heart of Middelburg, Zeeuwse Streken found its home.
Cas thus shows that gastronomy can be more than cooking alone: a way to bring people together, tell stories, and put Zeeland even more firmly on the map.
